In recent years, there has been a dramatic increase in the level of interest in the nutrition-physiological efficacy of complex carbohydrates. A healthy diet, and this includes the development of functional foodstuffs and ingredients associated with good nutrition, has grown in importance in the face of a constant rise in diseases of modern civilization.

The main goal of the “Healthy Carbohydrates” research project funded by the Austrian Research Promotion Agency (FFG) is to establish a systematic in-vivo model in order to be able to quickly and definitively rate carbohydrates according to their health-promoting properties.
